Colin's BBQ Trout
Ingredients
1 whole trout
1 x lemon chopped
1 x whole chilli chopped
2 cloves chopped garlic
Handful fresh mint & thyme
1 - 2 Packet of streaky bacon
Bunch Broccolini
Method:
Scale and clean the trout
Stuff with lemon, chilli, garlic, mint & thyme.
Wrap in bacon, overlapping.
Place on a hot BBQ - cook both sides.
Cook broccolini and place on top of the cooked trout.

Juice from ½ lemon
Method:
Melt 100g butter in pan. Add a large handful of sliced almonds, capers and lemon juice. Pour over the trout & broccolini.
Serve immediately.
